Another Mold Question

I am new at growing/using wheatgrass. I have been growing for about a month, about 6 trays, and each tray has had mold. White puffy clouds that hang around near the bottom of the grass. I use a peet moss and perlite mixture to grow in and I use tap water and citricide mixed with a seaweed fertilizer, I use a spray bottle to water my trays. I live in Northwest Florida and it is very humid. I have been leaving my trays outside because the temp has been between 45-60, I felt the coolness would be good. I use my sprayer to knock the mold down constantly. My Question IS, is it OK to use the grass even though it has mold near the bottom of the grass? I cut above where the mold has been and I rinse my grass before using it. I have been juicing for about a week and didn't think much about it before. The grass looks healthy and tastes about how I would expect grass to taste . After reading some of the posts here I will start trying not to water as much and let it dry out some to see if that helps. But for now I want to make sure that if I keep using the grass I have, I am not doing more harm than good.
