The outdoor grown grass is also gluten free because like the indoor grown wheatgrass you are familiar with, it never progresses beyond the green grassy stage.
The thought that the grass is grown for 6 or 7 months isn't entirely accurate and needs clarification.
If you plant in the spring or summer, the active growth cycle takes 90 - 120 days and it is harvested in 90 - 120 days.
If you plant in the fall for spring harvest (7 months later), the active growth phase is split between the fall (45-60 days) and spring (45-60 days). In the fall, the grass sprouts and grows a few inches, then the cold comes, the wheatgrass stops growing, then the frost and snow come, the wheatgrass freezes solid. It remains frozen until the spring when the plant spring back to life and resumes growing and continues to the harvesting height of 7" - 11". When wheatgrass is cool, growing slows. When wheatgrass goes below freezing, it becomes completely dormant.
There are 2 attractions to spring harvest. The first is winter kill which simply means that the winter kills virtually every weed as they do not have natural protection against freezing that wheat does. In addition, spring thaw provides ample water increasing the likelihood of an excellent crop.
Either way, the outdoor grown grass remains the same age and is always gluten free.
