How many times can I cut the wheatgrass?

Even though Ann Wigmore says that you can cut the wheatgrass twice, I know of no one that does. When it grows back the second time, the growth is too irregular to efficiently harvest the wheatgrass. It is our opinion that wheatgrass has used up many of the nutrients and the wheatgrass would not be as nutritious.

I actually joined eWheatgrass because of this very argument. I am just now soaking my first batch of seeds so I have no knowledge base to argue for or against harvesting the wheatgrass multiple times. I am reading a 50-50 split but it seems as though most people who grow it themselves are against harvesting multiple crops from the same tray. I am curious if anyone has come across any scientific research or analysis of the second crop compared to the first crop, any input is appreciated.
