Baby carrots are an excellent source of beta carotene, which is converted by the body into vitamin A (retinol). Vitamin A helps maintain vision and promotes the growth of healthy cells and tissues. Carrots also contain lutein, which is thought to protect the retina. One serving of this recipe provides twice the estimated daily requirement for vitamin A.

No it seems to be a proven fact. I believe it by looking at all the information I see on the internet and on the television. It truly should be taken more seriously by people. I mean, it wont cure blindess but just can improve your eyesight.

Carrots are really good for you too. The fact they can cure your eyes and improve your night vision is pretty cool. Rabbits dont eat them for that reason though.. They are just hungry little bastards.

Many studies shown that eating carrots may help lower the risk of breast cancer, lung cancer and colon cancer. Recently, researchers have isolated a compound called falcarinol in carrots that may be largely responsible for anti-cancer benefits. Falcarinol is a natural pesticide found in carrots that protects roots from fungal diseases. In daily diet, carrots are almost the only source of these compounds. A study conducted on mice found that they were fed with either raw carrots or falcarinol have one-third lower risk of developing colon cancer than mice not fed by them.

A carrot is an edible tuber with a feathery spray of leafy greens which makes it readily identifiable to gardeners. While all of carrots do come in a rich and matchless orange color, white, yellow, red, and purple varieties have also been cultivated. The carrot is among the most widely grown and popular vegetables in the world, and is eaten in a considerable number of ways, cooked and raw.
